So, you’ve got a ton of tomatoes and now you are wondering what to do with them. Conveniently, your Auntie Ivy has all the recipes you’ll need. Okay, maybe not all, but here’s a bunch to get you started.

Heather, the other half of my blog at Home-Ec 101, has a recipe for tomato pie. It’s already famous all over the internet. That’s a good ‘mater pie!

Over at Hip Mama, they’ve got a garden tomato recipe collective. The stuffed tomatoes with peaches, corn, cucumbers, and basil sounds especially tasty.

I absolutely love gazpacho, and this is my favorite recipe. And here’s yet another Home-Ec 101 recipe, (Sorry! Heather’s my favorite cook, and if you try her recipes you’ll see why) this one is for Chicken Pilau, which  is amazing and freezes really well.

And here’s my own simple, but very tasty salsa recipe:

Salsa ala Ivy

4 medium tomatoes, diced
1 medium onion, diced
2 jalapeños, chopped finely
1/4 cup* cilantro, chopped finely

Mix all ingredients well and refrigerate for at least an hour before enjoying.

Seriously, it’s just that easy and it tastes so fresh!

*I usually use a half cup of cilantro, but I absolutely LOVE cilantro.
